As award winning hostesses, we continue to strive to be the best and offer our guests something different and unique. Currently there are no Italian restaurants in Albany. We have long been fans of Italian cooking. We attended a cooking class in Melbourne and Italian dinners have featured on our dinner menu since we opened.
Ever since Italians migrated to Australia and introduced us to Spaghetti Bolognese and pizza, Australians have incorporated this wonderful, satisfying cuisine and it is now firmly intertwined into our national cooking culture.
In our tradition, the sauce goes on top of the pasta, and usually a lot more is used than in traditional Italian cuisine. We find Italian food to be fattening and covered with too much cheese, which means the food looses its fresh flavours.
Italians believe in simple cooking and they respect fresh produce. Some of the most favourite dishes of Italians contain just a few simple ingredients, carefully selected and served at their best.
Cheese and wine are a major part of the cuisine, as is coffee, particularly espresso.
Becki and I decided last year that we would travel to Italy and immerse ourselves in the culture and food of the Italians. We would talk to restaurateurs, visit fresh food markets, dine at restaurants that served typical Italian fare and come home with a new knowledge of real Italian cooking.
