Hot and Sour Steamed Fish with Thai Salad

Ingredients  (Serves 4)

4 x 200gm Snapper or any other white fish
3 fresh red Thai chillies
3 fresh kaffir lime leaves shredded
10cm stick lemon grass
Hand full each of fresh mint, coriander, basil
150gm snow peas
2 fresh long red chillies, seeded and slice thinly
1/2 red capsicum thinly sliced
2 spring onions, thinly sliced
50gm snow pea sprouts
1 mango thinly sliced

Lime and Sweet Chilli Dressing
2 teaspoons sweet chilli sauce
80ml fish sauce
80ml cup fresh lime juice
2 teaspoons peanut oil
1 clove crushed grlic
1cm pice grated fresh ginger
1 teaspoon grated palm sugar (use raw if you don't have any)

Make lime and sweet chilli dressing by combing all ingredients and mixing well.

Combine thai chilli, kaffir lime leaves and lemon grass with half the dressing mix well and add fish.  Cover and refrigerate 30mins

Place fish mixture in a single layer in a steamer - I used the Varoma Bowl of my Thermomix and steam fish for approx 10 mins.

Combine the remainder of the ingredients toss with the left over dressing and serve.  Lo Fat and Lo Carb.
