Neapolitan Chicken Parcels with Rocket & Red Onion Salad


4 single breast filles

8 large fresh basil leaves (I always double this amount as we love basil)

8 drained marinated artichokes heart quarters

100 gms semi-dried tomatoes

150g bocconcini cheese, sliced

Tocket and Red onion Salad

1 tablespoon olive oil

2 tablespoons lemon juice

1 teaspoon dijon mustard

100 grams rocket leaves

1/2 cup basil leaves

1 medium red onion sliced thinly

1 tablespoon baby capers

Using meat mallet, gently pound out the chicken fillets between sheets of plastic.  Place all the ingredients onto the chicken, then tie the chicken into parcels using kitchen string.Cook the chicken parcels on a grill plate or in a frypan till golden brown.  Cover with foil until cooked through.  I used my new 5 in 1 pot and it was awesome.

Make the rocket salad and serve parcels on top of salad
