Warm Chicken and Coriander Salad ~ Made in Minutes




1 tablespoon peanut oil

1/4 cup slivered almonds

6 chicken breasts sliced thinly

4 tablespoons chopped fresh coriander

1 small red capsicum coarsely chopped

2 sticks celery coarsely chopped

250 g cherry tomatoes, halved

1 avocado, sliced thinly

3 spring onions, chopped coarsely

1 bag baby mixed lettuce leaves or baby cos lettuce


1/2 cup lo fat mayonnaise

1/2 cup natural yoghurt

2 tablespoons fresh lemon juice

Heat oil in large saucepan, stir in nuts until lighly browned; remove from pan.  Reheat oil and add chicken until cooked.  Remove and drain on absorbent paper.

Combine nuts, chicken, coriander, capsicum, celery and dressing.  Gently fold in tomatoes, avocado, onion and lettuce.

Dressing - Combine all ingredients in a bowl.

Serves 4  Lo Fat and Lo Carb 

If you are not fussy about the fat content use real mayonaisse and sourcream instead of yoghurt.
