Ham & Cheese French Toast ~ Gluten Free

Ham & Cheese French Toast  Gluten Free 

Gluten Free Bread usually tastes awful...try this recipe for a yummy breakfast. The bread is soaked in an egg, milk and cream mixture, fried then baked in the oven. 

 2 Serves 

6 Slices of Gluten Free Bread.

8 slices of smoked ham

8 slices of tasty cheese...try Swiss

2 tsps Dijon Mustard

6 Free Range Eggs

1 ½ cups milk (use lo fat or skim if you are watching your weight)

½ cup pouring cream (or just use 2 cups milk – total)

60g butter

 

Preheat oven to 190C. Place a wire rack on an oven rack and spray with olive oil.

Spread each slice of bread with Dijon Mustard, 2 slices of cheese and ham.  Place 3 slices of bread on top of each other.

Crack eggs into a bowl, add milk and cream, season to taste with salt and pepper.  Pour mix into a shallow dish and add the bread. Leave for 10 mins, then turn over...leave another 10 mins until the mixture has been soaked into the bread.

Heat the butter in a shallow fry pan and when sizzling add the soaked bread.  Cook for 1 – 2 minutes each side until golden brown.  Place on wire rack and bake for 15-20 mins till cooked through and cheese is melted.

Serve immediately with a roasted vine ripened tomato drizzled with olive oil, sea salt and black pepper.
